How many servings of fruit should we get each day?

You have probably heard the familiar advice from the Health Promotion Board: 2 servings of fruit daily is the recommended amount for a healthy diet.

In today’s world, some people reach for bottled fruit juice off the supermarket shelf as a quick and tasty way to hit that target. But, have you ever wondered what goes into that juice?

In the Juicy Science workshop, students will work in teams (3-4 pax) to explore the fascinating role of enzymes in modern food technology, particularly in the maceration of fruit, including the extraction and clarification of juice.
